Environmentally Sound
Commercial food preparation generates a substantial carbon footprint by consuming large amounts of energy and generating tons of waste. Chief among the energy wasted is from ventilation systems, cooking and dishwashing as well as the way food is grown, packaged, transported and handled as waste.

Thanks to the talented chefs at Roosevelt University, our menu for the Great Lakes Bioneers Chicago conference is going to include foods that are not only delicious, but to the maximum extent possible, organic and locally sourced with vegan and vegetarian options.
